Tour & Taste in Frantoio Ipogeo

Frantoio Ipogeo

In the heart of the Salento countryside lies a treasure carved in stone: a 16th-century underground olive oil mill, once powered by animals and the wind.

Built inside a natural cave and later expanded, the mill was used from November to May to produce lampante oil, once the region's main source of light. Here, blindfolded donkeys turned the millstones, and the workers, called trappitari, lived underground for months, guided by the mill worker, Nachiro.

During the tour, you'll explore the original stone machinery, olive storage rooms, and ancient pressing systems.

The experience concludes with a guided olive oil tasting, featuring two regional extra virgin olive oils paired with traditional bread made with Senatore Cappelli durum wheat.
