Salento's traditional cuisine is a journey through the authentic flavors of tradition, combining the simplicity of ingredients with the richness of the land. Among restaurants, trattorias, and small eateries, you can savor dishes that tell ancient stories: handmade pasta, pezzetti di cavallo (a type of horse meat) and bombette (a type of pasta), fish dishes, honey, and intensely flavorful farm cheeses, paired with red, white, and rosé wines.
